Roja Elote Popcorn

INGREDIENTS

  • 1 cup popcorn kernels
  • 3 tbsp Bird & Co. Roja Oil
  • 4 tbsp unsalted butter, melted
  • 1/2 cup Cotija cheese
  • 2 tsp Tajín seasoning
  • 1 tsp salt lime wedge

INSTRUCTIONS

  1. Heat Bird &Co. Roja oil in a large, heavy-bottomed pot over medium-high heat. 
  2. Add a few test kernels and wait for them to pop.
  3. Add remaining kernels, cover pot with lid, and remove from heat for 30 seconds.
  4. Return to high heat.
  5. Once the popping slows to several seconds between pops, remove from heat
  6. Drizzle with melted butter, sprinkle with Tajin & Cotija and a squeeze of fresh lime
