INSTRUCTIONS
- Heat Bird &Co. Roja oil in a large, heavy-bottomed pot over medium-high heat.
- Add a few test kernels and wait for them to pop.
- Add remaining kernels, cover pot with lid, and remove from heat for 30 seconds.
- Return to high heat.
- Once the popping slows to several seconds between pops, remove from heat
- Drizzle with melted butter, sprinkle with Tajin & Cotija and a squeeze of fresh lime
