Classic Birria Taco & Carnitas Marinade
 

INGREDIENTS

  • 8 Corn Tortillas
  • 1 cup Shredded Cheddar Jack cheese
  • 1 White Onion
  • 1 bunch Cilantro
  • 1 pound shredded beef or pork
  • 1/4 Cup Bird & Co. Roja Oil

INSTRUCTIONS

  1. Dip Corn tortilla in Roja Oil and cook on one side
  2. Add cheese, onion, cilantro, and beef
  3. Fold in half and cook until cheese is melted.

CARNITAS MARINADE & BRAISING

INGREDIENTS

  • 2Tbl Kosher Salt
  • 1 Tblspn Black Pepper
  • 1 Tblspn Garlic Powder
  • 1 Tblspn Cumin
  • 1/2 Tblspn Oregano
  • 1/2 Tblspn Paprika
  • 1/2 Tblspn Onion Powder
  • 1/2 Tblspn Chili Powder
  • 1/2 Cup Roja Oil
 
  • 1/2 Tblspn Oregano
  • 1/2 Tblspn Paprika
  • 1/2 Tblspn Onion
    Powder
  • 1/2 Tblspn Chili
    Powder
  • 1/2 Cup Roja Oil


CARNITAS BRAISE

  • 1 Smalll (4lb)   Pork Butt
  • 1/2 Cup Brown Sugar
  • 3/4 Cup  Carnitas Marinade
  • 2 Mexican Cokes

INSTRUCTIONS:

  1. Preheat oven to 250 F
  2. Rub Pork butt with brown sugar then carnitas marinade
  3. Add Pork & Mexican Coke to dutch oven and cover 
  4. Cook for 3.5 hours
