INGREDIENTS
- 8 Corn Tortillas
- 1 cup Shredded Cheddar Jack cheese
- 1 White Onion
- 1 bunch Cilantro
- 1 pound shredded beef or pork

1/4 Cup Bird & Co. Roja Oil
INSTRUCTIONS
- Dip Corn tortilla in Roja Oil and cook on one side
- Add cheese, onion, cilantro, and beef
- Fold in half and cook until cheese is melted.

- 1 Tblspn Black Pepper
- 1 Tblspn Garlic Powder
- 1 Tblspn Cumin
- 1/2 Tblspn Oregano
- 1/2 Tblspn Paprika
- 1/2 Tblspn Onion Powder
- 1/2 Tblspn Chili Powder
- 1/2 Cup Roja Oil

CARNITAS BRAISE
- 1 Smalll (4lb) Pork Butt
- 1/2 Cup Brown Sugar
- 3/4 Cup Carnitas Marinade
- 2 Mexican Cokes

INSTRUCTIONS:
- Preheat oven to 250 F
- Rub Pork butt with brown sugar then carnitas marinade
- Add Pork & Mexican Coke to dutch oven and cover
- Cook for 3.5 hours
